With it, we’ll begin brewing “Hachihachi,” our olive yeast sake filled with the blessings of the island. Polished to 88%, this low-refined sake is rich and packed with the full flavor of rice. It pairs beautifully with any meal and brings a touch of elegance to the dining table …That said, every year we say, “This is the last batch!”—and somehow, the brewing keeps going. So, our brewery team doesn’t believe it anymore. 😭
