We have entered the crucial stage of steaming rice polished to 35% of its original size—used for crafting our finest daiginjo sake. This month, our entire team is renewing our focus and care, working with heartfelt dedication and utmost attention to safety to ensure a smooth and injury-free brewing process. “Kagayaki of Shodoshima” is the flagship sake of Shodoshima Shuzo. It is brewed by hand using only the finest selection of “Senbon Nishiki,” a sake rice variety well-suited to the climate of the Seto Inland Sea. The rice is carefully polished down to 35%, resulting in a daiginjo sake with a rich aroma and a deep, elegant flavor that lingers on the palate. The name Kagayaki, meaning “radiance,” reflects our heartfelt wish for Shodoshima’s local sake to continue shining brightly and to be cherished by the people of this island for generations to come.
